About Alipús
Alipús began around 1999-2000 under the umbrella of Grupo Los Danzantes, working with multiple family-run palenques across Oaxaca (e.g., in San Juan del Río, San Andrés). Its model emphasises traditional production, agrarian support and terroir-driven expression by independent mezcaleros.
About Mezcal Espadin
Espadín mezcal is made using the cultivated agave species commonly known as Espadín, which is the dominant agave in mezcal production in regions such as Oaxaca, Mexico. Because it matures in roughly eight to twelve years and offers relatively high sugar content, Espadín is more economical and widely used than many wild agave varieties. Flavor-wise, Espadín mezcals often display roasted-agave notes, hints of sweet potato or ripe fruit, mild smoke, and a balanced herbaceous backbone. These qualities make Espadín a versatile choice: excellent when enjoyed neat to appreciate the agave character, and also a solid substitute for other spirits in agave-driven cocktails.
