It features expressions from three states and combines modern techniques (mechanical milling) with traditional ones (spontaneous fermentation, small copper stills) to maintain artisanal character while scaling access.
About Mezcal Tobalá
Maguey Tobalá (Agave potatorum) is a small, wild agave that grows in rocky, high-altitude terrain. It forms a compact, low rosette rather than a tall trunk and typically takes more than a decade to mature. Due to its high sugar content and low water volume, mezcal made from Tobalá often carries concentrated minerality with bright fruity and floral notes, making it one of the most aromatically expressive agaves used in mezcal production.
