About Pensador Mezcal
Pensador Mezcal is an artisan mezcal produced using traditional methods in the Miahuatlán region of southern Oaxaca. The brand works directly with two small, family-run farms — the García Morales and Méndez families — who grow and harvest their own agave and distill on site using earth-pit cooking, mule-powered milling, open-air fermentation, and small copper pot stills.
Pensador was created to highlight the distinctive terroir of Miahuatlán and to support the people who preserve its mezcal traditions. The brand keeps production intentionally small and transparent, emphasizing practices that maintain biodiversity, fair pay, and long-term sustainability for the families involved.
About Mezcal Espadin
Espadín mezcal is made using the cultivated agave species commonly known as Espadín, which is the dominant agave in mezcal production in regions such as Oaxaca, Mexico. Because it matures in roughly eight to twelve years and offers relatively high sugar content, Espadín is more economical and widely used than many wild agave varieties. Flavor-wise, Espadín mezcals often display roasted-agave notes, hints of sweet potato or ripe fruit, mild smoke, and a balanced herbaceous backbone. These qualities make Espadín a versatile choice: excellent when enjoyed neat to appreciate the agave character, and also a solid substitute for other spirits in agave-driven cocktails.
