Destilado de Agave literally means “agave distillate” — a broad label for spirits made from cooked, fermented and distilled agave that do not qualify under the certified appellations for Mezcal or Tequila. These spirits often come from small-scale producers working outside the geographic or regulatory boundaries of the official designations. Because they fall outside these ‘DO’ limits, they offer producers greater flexibility in agave species, terroir, and methods — and for drinkers, a chance to explore complex, authentic flavour profiles.
