Product Description
A pechuga mezcal made from 100% wild Papalometl (Agave potatorum) in San Diego la Mesa Tochimiltzingo, this small-batch release is crafted using a traditional conical earthen oven, hand-crushing, fermentation in pine-wood vats, and double distillation in copper. Designed as a ceremonial-style spirit, it’s a smooth, approachable expression that highlights the character of its wild agave and artisanal production.
About Zinacantán
Zinacantán Agave Spirits is a small-batch, artisanal project from Santa Catarina Minas, Oaxaca, created to showcase the region’s ancestral mezcal traditions. The brand’s spirits are distilled in ollas de barro — clay pot stills that define the Minas style — and produced in limited quantities that highlight the unique character of each batch.
Led by maestro mezcalero Don Juventino García, Zinacantán works with local agaves such as Espadín, Tepeztate, and Tobala, using earth-pit roasting and open-air fermentation to preserve authentic regional practices. The brand focuses on tradition, locality, and craftsmanship, offering agave spirits that reflect the mineral-rich soils and centuries-old distilling heritage of Santa Catarina Minas.
About Mezcal Pechuga
Mezcal Pechuga is a traditional style in which a finished mezcal is redistilled with seasonal fruits, spices, and a raw protein—often a chicken, turkey, or other local meat—hung inside the still. According to Mezcal Reviews, this process infuses the spirit with aromatic depth and a silky texture while retaining its underlying agave character. Because the protein and botanicals are added during a final distillation rather than after, Pechuga mezcals typically show gentle spice, soft fruit notes, and rounded minerality, making them some of the most ceremonial and labor-intensive expressions in mezcal production.
